A: Pours a bright cherry-amber rose color that blooms into two fingers of thick, off-white head. The head recedes into a thin layer with spotty lacing and retention until the end.
S: Earthy, herbal, and sweet fruit on the front end. Apricot, peach, and a curious tangy fruit I can’t put my finger on. There’s an obvious spiciness to the brew that I don’t attribute to the wasabi.
T: Very sweet, but balanced with what I assume is the Cajun rice earthiness. Lacks the super bitter, citrusy IPA profile that I expected. There’s a mild alcohol burn that brings some heat to the back of the throat. The wasabi is very mild, but clear in the finish. A very strange and pleasant experience.
M: Medium bodied, creamy and bitter.
O: I had this with our local Bourbon & Toulouse Chicken Etouffee and it was one of the best summer pairings I’ve ever had. The bottle/label is absolutely beautiful. I think I need to snag a couple more of these before it’s sold out.
